How to make
Clean, wash and coarsely chop the spinach.
In a deep frying pan, place the grated or finely chopped onion and the garlic cloves and fry them in the heated olive oil.
Add the spinach and when it softens, season with the spices, salt, black pepper, basil, nutmeg and curry (optional).
Remove from the heat and add the ricotta cheese while the spinach is still warm. Stir the sauce well until the ricotta melts.
In a pot with salted water, boil the fresh tortellini for 3-5 minutes or according to the instructions on the package. Strain from the water.
Divide the tortellini between two plates. Spread the spinach and ricotta sauce over each portion. Sprinkle with parmesan cheese on top.
